Intermittent Fasting Recipe - Gound Turkey Sweet Potato Skillet

Ingredients Needed

For this recipe you will need the following ingredients:

  • 1 Pound Ground Turkey
  • 1 Medium Onion (Chopped)
  • 1 Shallot (Finely Chopped)
  • 3 Garlic Cloves (Minced)
  • 1/4 Cup Tomato Paste
  • 1 Medium Sweet Potato (Peeled & Cubed)
  • 1 Cup Chicken Broth
  • 2 teaspoons Smoked Paprika
  • 1/2 teaspoon Salt and 1/4 teaspoon Pepper
  • 3 Cups Chopped Fresh Kale
  • Dash of Crushed Red Pepper Flakes
  • 1 Medium Ripe Avocado (Peeled and Sliced)
  • Fresh Mint (Minced) – Optional

Directions

First, in a large skillet, cook turkey, shallot and garlic over medium heat – about 10 minutes.

Next, stir in tomato paste and cook for one more minute. Then, add in sweet potato, chicken broth, paprika, salt and pepper. Bring the mixture to a boil and then reduce the heat to simmer. Cover the skillet and let it simmer for about 10 minutes, stirring a few times.

Finally, add Kale and Crushed Red Pepper Flakes to the skillet, stirring and cooking for another 2 minutes. Serve the skilled topped with sliced Avocado and Mint. ENJOY!

RECIPE TIP: I also like to add a dollop of sour cream to mine. SO YUMMY!
