These are gluten-free Coconut Crepes are seriously INCREDIBLE. I’ve made them a few times now! I found the recipe in one of my favorite books of all time – “EAT DIRT”.
Thanks, Dr. Axe. They are so fluffy, healthy and delicious. I’ll never need to eat another high carb pancake again. I have been adding a scoop of my Quest protein powder to them and then topping them with some nut butter, berries and of course, a little whipped cream. ENJOY!
