Chicken Noodle-less Soup
Ingredients Needed
The simple ingredients needed for this recipe include:
- 2 Cups Shredded Rotisserie Chicken
- 1 Cup Onion (Diced)
- 1 Cup Celery (Diced)
- 1 Cup Carrots (Diced or Shredded)
- 1 Cup Mushrooms (Sliced) – these are optional
- 10 Cups Chicken Broth (I use Low-Sodium)
- 1 Whole Bay Leaf
- 1 Tablespoon Italian Seasoning
- 1 (10 oz) Steamable Bag of Butternut Squash Chunks (Find in the Frozen Food Section of your grocery store)
- Salt & Pepper (to taste)
Directions
First, in a large pot add all ingredients except for the butternut squash. Mix Well. Bring to a boil, reduce heat to a simmer, and cover. Simmer for 45-60 minutes.
Next, steam squash (5 minutes in the microwave) and add to pot.
Finally, remove bay leaf from the pot and ENJOY!
