Baked Cheesy Zucchini Ziti
Ingredients Needed
For this yummy recipe you will need a few simple ingredients:
- 1 Tablespoon Olive Oil
- 1 (28 oz) Can of Crushed Tomatoes
- 4 Large Zucchini (Sliced into thin coins)
- 2 Cloves Garlic (Minced)
- 1 Medium Onion (Chopped/Diced)
- CHEESE (1 1/2 Cups Ricotta Cheese, 2 Cups Shredded Mozzarella Cheese, 1/2 Cup Grated Parmesan Cheese)
- 2 Tablespoons Tomato Paste
- SPICES (Pinch of Crushed Red Pepper Flakes, Pinch of Kosher Salt, 1 teaspoon Dried Oregano, 2 Tablespoons Basil – fresh or dried)
- *OPTIONAL – Add meat to this vegetarian dish if you would like (Ground Turkey and Ground Beef work great)
Directions
FIRST, preheat oven to 375 degrees. In a large saucepan, heat olive oil over medium heat. Add onion and cook for about 5 minutes. Stir in red pepper flakes and cook for 1 minute.
NEXT, if you are choosing to add meat (ground turkey or beef) to this dish, now is the time to add it in. Season with salt and pepper and fully cook meat. Add in tomato paste and oregano. Cook for two minutes more.
THEN, add in crushed tomatoes. Simmer and stir occasionally for about 10 minutes. Remove from heat and stir in zucchini coins and basil.
FINALLY, scoop half of the zucchini mixture into a large baking dish. Dollop all over with half of the Ricotta, Mozzarella, and Parmesan cheeses. Then repeat one more layer with remaining zucchini mixture and cheeses. Bake for 25 Minutes, remove from oven and garnish with basil. ENJOY!
