Spinach Turkey Meatball Pasta
Ingredients
For this awesome recipe you will need:
- 1 Pound Ground Turkey (I love the Jennie-O Brand)
- 1 Cup Baby Spinach (Chopped)
- 1 Egg
- 1 Tablespoon Minced Garlic
- 1 Tablespoon Italian Seasoning
- 1/8 Cup Almond Flour
- 1 Bunch Green Onions (About 4-5 Whites diced)
- 2 Medium/Large Zucchini
Recipe Directions
FIRST, preheat oven to 375 degrees. Combine all ingredients together (except zucchini) and mix together well.
NEXT, using a cookie scooper, scoop out small/medium-sized balls and place meatballs into greased mini muffin pan wells. Cook for about 10 minutes, take out, flip each meatball, and cook for another 9-10 minutes until cooked through.
THEN, spiralize or thinly slice zucchini. Saute’ zucchini in a skillet with 1-2 Tablespoons Olive Oil and 1 Tablespoon Italian seasoning. Cook for 4-6 minutes.
FINALLY, top zoodles (zucchini noodles) with meatballs and your favorite low-sugar/low-carb marinara sauce (I like to use RAO’s).
