In January of 2021 I discovered intermittent fasting and began my weight loss journey. By combining intermittent fasting with healthy and simple weight loss swaps like this one, I lost 46 pounds in 4 months. And, the best part, I’ve kept it off for almost three years now.
I love to experiment with making different healthy recipes. It’s so fun to put a healthier twist on classic recipes and turn them into low carb, protein-packed dessert recipes that are actually good for you. And this fun recipe is no exception.
Perfect Protein Powder Snow Ice Cream
Now, let’s reveal the most perfect protein powder ice cream weight loss dessert recipe. It’s protein-packed, low-carb, low-sugar and so easy to make after a nice big snow storm!
SERVING SIZE
This easy recipe serves 3-4 people, however it’s very easy to simply cut the recipe in half if it’s just you who is looking to indulge in a quick and satisfying after dinner treat.
SIMPLE INGREDIENTS NEEDED For This Sweet Treat
To make this delicious protein ice cream recipe you will need the following healthy ingredients:
- 1 CUP COCONUT MILK (for some extra protein you could add a pre-made protein shake here instead of the coconut milk if you like)
- 1/4 CUP Flavored PROTEIN POWDER ( I used QUEST CINNAMON CRUNCH – it’s soooooooo good) Quest has so many delicious flavors like SALTED CARAMEL and Chocolate Protein Powder. And, if you’re not worried about the protein content, feel free to sub in some cocoa powder or even a package of yummy pudding mix here instead.
- 1 teaspoon PURE VANILLA EXTRACT (I like to use ALMOND EXTRACT sometimes)
- A Pinch of KOSHER SALT
- 1 TABLESPOON Zero Calorie LOW CARB SWEETENER of your choice (Stevia, Swerve, Monk Fruit). If you don’t want the added sugar taste, simply leave it out!
- 10 CUPS of the main ingredient – FRESH SNOW
- HEAVY WHIPPING CREAM (Anywhere between 1-3 Tablespoons – you choose)
- EXTRA FAVORITE ICE CREAM TOPPINGS – These are totally optional but consider topping your snow ice cream with WHIP CREAM, FRESH BERRIES, LILY’S BAKING CHOCOLATE CHIPS, MAPLE SYRUP or a few crumbles of your favorite LOW CARB PROTEIN BAR (THINK! KETO is my favorite – Chocolate Peanut Butter Pie flavor)
SIMPLE HEALTHY RECIPE INSTRUCTIONS for Snow Ice Cream
STEP 1: Grab a large bowl and add the COCONUT MILK, PROTEIN POWDER, VANILLA EXTRACT, KOSHER SALT and SWEETENER.
MIX TOGETHER REALLY WELL USING A WHISK!
STEP 2: Send somebody who loves you very much outside on a snowy day, into the freezing cold to collect 10 CUPS OF FRESH SNOW for you. TIP: Husbands are great for this or, better yet, kids who are home from school because of a snow day and are driving you crazy.
STEP 3: Slowly add in the 10 cups of SNOW to the bowl with the rest of the ingredients.
MIX TOGETHER WELL!
STEP 4: Slowly add in HEAVY WHIPPING CREAM, stirring as you add it in. The amount of heavy whipping cream that you use is totally up to you and your personal texture and taste preference. It will start out with a shaved ice consistency, however you can give it more of a creamy texture by adding more heavy cream as it works as a kind of thickening agent. You might have to play around with it a little bit.
