Roasted Lentil Chicken Salad
Packed with antioxidant-rich Kale and fiber-filled apples and lentils, it’s sure to be your new favorite lunch or dinner go-to meal.
Ingredients
You only need a few simple ingredients to put this superfood salad together quickly.
- Chicken Breasts (3-4)
- Apples (1-2) I like to use Granny Smith and/or HoneyCrisp Apples
- Kale
- Roma Tomatoes (2)
- Can of Lentils (15 oz)
- Feta Cheese (4 oz)
- Veggie Stock (2 Tablespoons)
- White Balsamic Vinegar (1/2 Cup)
- Lemon Pepper Seasoning (to taste)
Directions
FIRST, preheat oven to 425 degrees. Chop kale into bite-sized pieces and dice apples and tomatoes.
THEN, strain and rinse the lentils and then dry off with paper towel. Spread lentils on a foil-lined baking sheet, drizzle with veggie stock and season with a little salt and pepper.
NEXT, roast lentils in oven for about 18 minutes, stirring halfway through. While lentils are roasting, season chicken with Lemon Pepper and fully cook.
FINALLY, in a large bowl, whisk together vinegar, 4 Tablespoons olive oil and a pinch of sugar. Add in chopped Kale and massage until leaves are soft. Add cooked chicken (cut into strips), apples, tomatoes and lentils to bowl. Mix well, top with Feta Cheese and thoroughly ENJOY!
