This intermittent fasting dessert recipe is nothing short of amazing. It’s low-sugar, low-carb, and packed with high-quality protein. And honestly, this sweet treat tastes just as good, if not better, than regular ice cream. My husband LOVES this healthy dessert so much that I make it for the two of us almost weekly.
Feel free to use whatever flavor of protein powder you want to make this keto diet friendly mason jar protein ice cream. I love using QUEST lean protein powder because it’s healthy (no artificial sweeteners and 26 g protein per serving), delicious and extremely easy to cook and bake with. My favorite flavors to use are SALTED CARAMEL, CHOCOLATE and especially CINNAMON CRUNCH. YUM CITY! Additionally, low-carb sweeteners that work well include Swerve, Monk Fruit and Stevia.

Peanut Butter Coco-Chip Protein Yogurt
I started making this dessert when I began my weight loss journey in January of 2021. This healthy and delicious dessert absolutely helped me lose 46 pounds in 4 months.
I have been enjoying this dessert for almost three years now. As you can see from the photo above, I often top my protein yogurt dessert with fresh berries, LILY’S BAKING CHIPS or a few regular chocolate chips and some delicious KETO NUT GRANOLA (Blueberry Cinnamon). Additionally, flax seeds and chia seeds make great additions to this dessert, as well.
I almost always use Two Good Greek Yogurt when I make this recipe. Two Good Greek Yogurt is the perfect intermittent fasting food. I love it because it has many delicious flavors. Additionally, it’s low-carb, packed with 12 grams of protein and only 2 grams of sugar per container. WooHoo!

Butterscotch Pumpkin Cream Muffins
Whether it’s spring, summer, winter, or fall, I love ALL THINGS PUMPKIN! Pumpkin is a true superfood when it comes to your health and maintaing your weight. It’s full of awesome things that your body loves, like vitamins and fiber. It’s pretty low in calories and since pumpkin is a good source of fiber, it can help curb your appetite, too.
Feel free to substitute coconut flour for the almond flour in this recipe if you wish. Additionally, you can use an alternative low-carb sweetener of your choice. Just be sure to choose one that won’t spike your blood sugar levels. Or simply leave the sweetener out, since the pumpkin itself does a pretty good job of flavoring these muffins with just the right amount of sweetness. Enjoy!
Muscle Mug Cake Dessert
This recipe is one of my absolute favorite keto desserts. Depending on the protein powder that you choose to use in this recipe, your muscle mug cake can literally be any yummy flavor that you want. Quest protein powder is always a good option. I like to use Quest’s PEANUT BUTTER, SALTED CARAMEL and CHOCOLATE whey protein powder flavors.
If you are in the mood for some extra chocolate flavoring, cocoa powder or cacao powder are always great additions. And since Cacao is a healthier alternative, I often stick to adding Cacao Powder to my mug cake.
