BUTTERSCOTCH CREAM MUFFINS

These Butterscotch Pumpkin Cream Muffins make for the perfect low-sugar weight loss treat. Whip up a batch during the fall months or enjoy at anytime during the year.

Ingredients Needed

The ingredients needed for this awesome recipe include:

  • 4 Eggs Beaten
  • 4 Tablespoons Melted Butter
  • 1 teaspoon Vanilla Extract
  • 3/4 Cup Pure Pumpkin
  • 1/2 Cup Coconut Flour
  • 1/2 Cup Granulated Sweetener
  • 1 1/2 Tablespoons Pumpkin Spice
  • 1 teaspoon each: Nutmeg and Apple Pie Spice
  • Couple shakes of Cinnamon and Cloves
  • 4 oz. Cream Cheese
  • 1.5 teaspoon Vanilla Extract
  • 1 Tablespoon Low-Carb Sweetener
  • 1/4 Cup Lily’s Butterscotch Baking Chips

Recipe Instructions

In large bowl, mix all the dry ingredients together. Next, add the wet ingredients to the bowl & mix all together well.

Add batter to lightly oiled muffin pan. Mix Filling ingredients, microwave to soften and mix a bit more. Add about 1 tsp soupy filling to each muffin. Swirl with toothpick! Bake muffins for 25 minutes at 350 degrees!

Cool 5 minutes. ENJOY!
