This Harvest Chicken Salad is the perfect fall OMAD intermittent fasting meal. It’s jam-packed with healthy ingredients and it can be put together and on your dinner table in just 10 minutes. YUM!
Harvest Chicken Salad
Ingredients
SALAD INGREDIENTS:
- Bag of SPRING MIX
- GREEN ONIONS (Chopped)
- HONEYCRISP APPLE (Chopped)
- DRIED CRANBERRIES
- SWEET POTATO (Diced)
- PECANS
- STRAWBERRIES (Chopped)
- CUCUMBERS (Diced)
- CHEESE (Parmesan, Goat, Feta – Your Choice)
- ROTISSERIE CHICKEN (Shredded)
VINAIGRETTE DRESSING INGREDIENTS:
- APPLE CIDER VINEGAR (1/2 Cup)
- OLIVE OIL (1/3 Cup)
- HONEY (1 Tablespoon)
- FRESH LEMON JUICE (1 Tablespoon)
- DIJON MUSTARD (1 Tablespoon)
- SALT & PEPPER (to taste)
Directions
FIRST, add all dressing ingredients to a mason jar with lid or a pour container. Shake dressing and place in the refrigerator while you put the salad together.
NEXT, in a large bowl, add the spring mix.
THEN, add in all other salad ingredients. Mix together well.
FINALLY, drizzle vinaigrette onto salad, mix and ENJOY!
