Ingredients
For this recipe you will need:
- Real Butter
- Diced Onions (I prefer green onions)
- Minced Garlic
- Cream Cheese (Full Fat)
- Riced Cauliflower (I like the stuff that comes in the frozen microwave bag)
- Sour Cream (Full Fat)
- Feta Cheese (Crumbled)
- Heavy Whipping Cream
Directions
FIRST, start by microwaving the frozen riced cauliflower. This usually takes about 5 minutes.
NEXT, add about 1 Tablespoon of butter and a handful of chopped onions and a little minced garlic to a skillet over medium heat.
THEN, once the riced cauliflower is done, add it to the skillet with the melted butter and onions.
FINALLY, add in a heaping spoonful of sour cream and cream cheese. Stir until combined. Then add in a handful of Feta Cheese (or cheese of your choice) and a little heavy whipping cream.
*I don’t actually have an exact recipe for this cauliflower risotto because I don’t actually measure anything out. I make it with these basic ingredients but different variations each time. No worries, though, it is super yummy EVERY SINGLE TIME.

It’s seriously AMAZING!
