Baked Egg Breakfast
Ingredients
- 1 Tablespoon Olive Oil
- 1/2 Cup Diced Onions
- 1 Cup Diced Colored Peppers
- 4 Pieces Cooked Crumbled Bacon
- 10 Large Eggs
- 1/2 Cup Almond Flour
- 1 teaspoon Baking Powder
- 4 Tablespoons Melted Butter
- 3 Cups Shredded Sharp Cheddar Cheese
- 1 Cup Chopped Baby Spinach
Instructions
FIRST, preheat oven to 350 degrees. Lightly oil a 9 X 13 inch or square baking dish. Add olive oil to saucepan over medium heat and saute’ onions and peppers for about 5 minutes.
NEXT, cook the bacon and then add bacon to the onions/peppers and mix. Pour mixture into prepared baking dish.
THEN, in a large bowl, beat eggs. Whisk in almond flour, baking powder, salt, and pepper. Add in butter, cheese, and spinach. Stir to combine.
FINALLY, add mixture to baking dish and bake for 30-35 minutes until firm in the center. ENJOY!
