This one, is no exception. It’s probably my all-time favorite gluten-free diet dessert recipe. Itโs the perfect treat and I am so excited to share this healthier option with you this holiday season!
This gluten-free recipe is not only good for those watching their weight by cutting down on carbs. It’s perfect for those who may have certain dietary needs or for those who suffer from celiac disease and are following a gluten-free lifestyle.
SERVING SIZE
This gluten-free easy recipe serves one but it is super easy to grab several fun holiday mugs and whip up a bunch of them all at once for your family or friends. Or you can stick to this cute little pumpkin mug that I use every time I make this delicious dessert.
SIMPLE INGREDIENTS NEEDED For This Quick Dessert
To make this delicious treat you will need the following healthy ingredients:
Wet Ingredients
- 1 EGG (Beaten)
- 1-2 Tablespoons BUTTER (Melted) or get in some healthy fats and use Coconut Oil
- 1 Tablespoon SOUR CREAM
- 1 Tablespoon 100% PURE PUMPKIN (NOT Pumpkin Puree or Pumpkin Pie Filling)
Dry Ingredients
- 3 Tablespoons Almond Flour or Coconut Flour (I like both but prefer Coconut flour. This is what I use in almost all of the gluten-free desserts I make)
- 1/2 teaspoon BAKING POWDER
- 1 Tablespoon PROTEIN POWDER of your choice ( I use QUEST Salted Caramel – it’s soooooooo good) Quest has so many delicious flavors
- A Sprinkle of CINNAMON (You decide how much)
- 1 Tablespoon Zero Calorie LOW CARB SWEETENER of your choice (Stevia, Swerve, Monk Fruit). If you don’t want the added sugar taste, simply leave it out!
*If you are having chocolate cravings, you can also use cocoa powder in place of the protein powder. It gives this perfect dessert a nice, subtle, natural sweetness. Or you can do 1/2 Tablespoon of protein powder and 1/2 Tablespoon of cocoa powder.
Optional Topping Ingredients
- Pure Whipped Cream
- A handful of LILY’S BAKING CHIPS for a nice sweet flavor (Gluten Free, No Sugar Added) or regular chocolate chips (if desired)
- Fresh fruit, flax seeds or chia seeds are extremely healthy and tasty toppings that can easily be added to this fun dessert

Super Simple Directions
STEP 1: Grab a mug or small bowl and add wet ingredients: EGG (Beaten), SOUR CREAM, BUTTER/COCONUT OIL (Melted) and PURE PUMPKIN!
MIX TOGETHER REALLY WELL!
STEP 2: Add in dry ingredients: ALMOND/COCONUT FLOUR, BAKING POWDER, PROTEIN POWDER and LOW-CARB SWEETENER.
MIX TOGETHER WELL!
STEP 3: MICROWAVE for 90 Seconds!
*That’s it! Let your mug cake cool for about 2 minutes. Then top with whipped cream, cinnamon, and baking chips (if desired). There are so many yummy, different ways to doctor up this recipe. Healthy eating never tasted so good!
