This is one of my absolute favorite low-carb side dish recipes. I enjoy making this side dish 1-2 times every week to enjoy alongside our GREEN CHEF whole family dinner!

There are so many creative ways to doctor up this recipe. I love to use different varieties of cheeses including shredded Parmesan Cheese, Gouda and Asiago. Additionally, I enjoy using different kinds of cream cheese. Chive and Onion, as well as, Garlic and Herb Cream Cheese tastes amazing in this low-carb easy side dish. And… sometimes I get really crazy & use the Kerrygold garlic and herb butter instead of the regular! YUM CITY!
This recipe has completely replaced my love and addiction to regular high carbohydrate rice and risotto! Honestly, I love it so much that my intense cravings for rice and risotto have completely disappeared. The best part is that it is super QUICK and EASY to make. If you have ever made actual risotto from scratch you know how extremely labor intensive it is – like legit 30-40 minutes of constant stirring. And, I kid you not, this stuff tastes just like creamy risotto that you would get in a fancy restaurant! It is seriously AMAZING!

I often substitute avocado oil for the olive oil in this recipe. In addition, a few simple ways to intensify the jicama flavor include sprinkling these fries with fresh herbs, or drizzling them with balsamic vinegar or lemon juice.
Finally, I recently made this recipe in my Ninja 5-in-1 Air Fryer with sweet potatoes and it was simply delectable.
