So, this one is now THE ONE AND ONLY! It is so easy to make and it has just the right amount of spice.
INGREDIENTS NEEDED
For this recipe you will need:
- 1 Rotisserie Chicken (Shredded)
- 4 Cups Low-Sodium Bone Broth
- 16 Ounce Jar of Chunky Salsa
- 3 (15 ounce) Cans Great Northern Beans (Drained)
- 1 (15 ounce) Can Whole Kernel Corn (Drained)
- 1 (10 ounce) Can Diced Tomatoes & Green Chilies
- 8 ounces of Cream Cheese
- 8 ounce block of Pepper Jack Cheese (I like to use Jalapeno Pepper Jack)
- 1 teaspoon Minced Garlic and a handful of Diced Onions
EASY RECIPE DIRECTIONS
FIRST, place all ingredients in a large crockpot and stir.
NEXT, cook on high for 5 hours or on low for 8 hours.
THEN, top with your favorite chili toppings (sour cream, avocado cubes, cilantro, Mexican cheese)

- 1 Rotisserie Chicken (Shredded)
- 1 Bag (12 oz) Frozen Green Beans (Microwavable) or 2-3 Cans Green Beans (Drained)
- 2/3 Tablespoons of Real Butter (or better, yet, use Ghee – learn why here)
- 1/2 teaspoon each (Garlic Powder and Onion Powder)
- 1/2 Cup Sour Cream
- 6 oz Cream Cheese
- 1/2 Cup Grated Parmesan Cheese
- 1/4 Cup Sharp Cheddar Cheese (Shredded)
- 1/4 Cup Sliced Almonds
- 1/8 Sun Dried Tomatoes (Cut Up)
Instructions
FIRST, preheat oven to 350 degrees and lightly oil a glass casserole dish.
NEXT, microwave the beans and drain the excess water or drain the canned beans. In dutch oven, melt butter or ghee over medium heat. Add sour cream, cream cheese and spices. Stir until smooth.
THEN, add in shredded chicken, sun-dried tomatoes, green beans and half of the almonds. Stir until well mixed. Spread the mixture into the casserole dish and top with the remaining almonds. Sprinkle the top with Parmesan Cheese.
FINALLY, bake the casserole for 30 minutes. With just 5 minutes remaining sprinkle with Sharp Cheddar cheese and bake for a few more minutes. ENJOY!
