Seriously… is there anything better than outdoor cooking and grilling in the summer? No way – especially in Michigan where I live. Michigan summers are magical and these three awesome recipes will have you firing up your Blackstone Grill several times a week.
I love these weight loss dinner recipes because these healthy meals fit in perfectly with my intermittent fasting OMAD (One Meal a Day) diet and lifestyle. In January of 2021, I lost 46 pounds in 4 months by combining intermittent fasting with healthy and quick recipes like these.
Each recipe is easy to make and requires only a few simple ingredients. Additionally, these recipes are packed with protein to keep you feeling full and satisfied while supporting, maintaining, and building lean muscle mass- which is super important for both weight loss and sustained weight maintenance.

BLACKSTONE GRILL Recipe #1
LEMON FETA GREEK GRILLED CHICKEN
This is an absolute MUST-TRY recipe. It’s definitely one of my favorite Blackstone chicken recipes to make throughout the summer and it truly makes for the perfect family dinner meal.
HOW TO MAKE
RECIPE INGREDIENTS NEEDED: For this recipe you will need: 3-4 Chicken Breasts, 1 Lemon, 3-4 Fresh Garlic Cloves, Oregano, Paprika, Basil, Rosemary, Dill and Feta or Parmesan Cheese.
RECIPE PREP: Grab a large mixing bowl. To make the marinade, mix together the lemon or lime juice and the zest from one fresh lemon or lime. Then, add in 3-4 minced cloves of garlic (or garlic powder), a few shakes of kosher salt and pepper and 1/2 teaspoon each of: OREGANO, PAPRIKA, BASIL, ROSEMARY and DILL. Then, add chicken to the marinade bowl, making sure each skinless chicken breast is thoroughly covered with the marinade. Refrigerate for 20-60 minutes.
BLACKSTONE GRILLING INSTRUCTIONS: Preheat grill to Medium-High heat for about 10 minutes. Add avocado oil to the grill surface area you’ll be using. Place marinated chicken on the grill. Then grill for about 7-9 minutes, flip, and grill the other side for 7-9 minutes. Finally, check internal temperature and take chicken off the grill once it hits 165 degrees Fahrenheit.
*RECIPE TIP: This recipe tastes even better if you reserve a small amount of the marinade when making it. Then, once the chicken is grilled, drizzle the leftover marinade over the cooked chicken right before serving. So good!
HEALTHY SIDE DISH OPTIONS: This grilled chicken recipe tastes extra yummy when it’s paired with Zesty Lemon Carrots or some show-stopping 5-Minute Tzatziki Cauliflower Risotto. Additionally, these side dish recipes are the perfect choice for those following low carb diets.

FIESTA LEMON-LIME GRILLED SALMON
I have been making this awesome Blackstone recipe for about three years now and it truly is nothing short of AMAZING. And… it’s so stinkin’ easy to make too.
HOW TO MAKE
RECIPE INGREDIENTS NEEDED: For this recipe you only need three simple ingredients: Salmon Filets, 1 Lemon and/or Lime, Mrs. Dash Fiesta Lime (Neon Green Top) Seasoning
RECIPE PREP: Head to the market or grocery store and purchase your salmon. I prefer Atlantic Salmon for this recipe, but any salmon variety will work. Then, once you get home, squeeze some fresh lemon juice (or lime) all over the salmon and heavily season the filets with Mrs. Dash Fiesta Lime Seasoning.
BLACKSTONE GRILLING INSTRUCTIONS: Preheat grill to Medium heat for about 10 minutes. Add avocado oil to the large cooking surface area you’ll be using. Place salmon filets skin side down for about 5-6 minutes. Then, flip salmon filets over, remove skin using grilling tongs. This part is a little tricky. You can watch how my husband does it in the video below.
Next re-season and grill for another 5-6 minutes. Flip one last time and grill for 1-2 more minutes until you get a golden brown, perfect sear. Finally, using your Blackstone or other cooking thermometer, cook salmon to an internal temperature of 145 degrees Fahrenheit.
HEALTHY SIDE DISH OPTIONS: This grilled salmon recipe tastes extra yummy when it’s served on a plate next to some Seasoned Green Beans. Another great addition is some low carb dreamy creamy cauliflower riced risotto.

BLACKSTONE GRILL Recipe #3
MEXI CALI GRILLED CHICKEN BURGERS
I feel a little bit like I’m cheating with this recipe since it comes straight from ALDI and it’s so darn delicious and easy to make. No joke – we make these up for dinner at least once a week during the summer grilling months. The best part about these burgers is the mild little spicy kick of fiesta flavor that they have.
These chicken burgers are low carb and are packed with a whopping 27 grams of protein per patty. Oh, and ALDI has Mediterranean Style Chicken Patties too. I’ve tried them and they are ALMOST as good as the Mexi Cali Style.

HOW TO MAKE
RECIPE INGREDIENTS NEEDED: For this recipe you really only need one thing: a box (or two) of “KIRKWOOD BRAND” MEXI CALI STYLE CHICKEN PATTIES from your nearest ALDI grocery store. You can easily find a box of these in the freezer section of the store. You’ll also want to pick up your favorite burger toppings. I’m a low-carb lover so I eat mine without the bun, however, it’s your burger so pick up a pack of buns if you want.
RECIPE PREP: Pre-heat the Blackstone Grill and gather all your favorite toppings (cheese slices, lettuce, bell pepper, avocado, hot sauce, soy sauce) for your chicken patties. There’s no need to smash burgers into patties – simply pull them out of the freezer and you’re good to go.
BLACKSTONE GRILLING INSTRUCTIONS: Preheat grill to Medium heat for about 10 minutes. Add avocado oil to the flat top grill surface. Add the frozen chicken patties straight to the grill. Then, simply follow the grilling directions found on the back of the box. My husband, the grill master, has found that cooking each side for about 7 1/2 minutes to an internal temperature of 165 degrees Fahrenheit works fantastic.
HEALTHY RECIPE ADDITIONS: This juicy burger recipe tastes extra awesome when it’s topped with some yum yum sauce or a little Chunky Green Apple Salsa. It’s also fun to serve this main course alongside a pile of low carb Jicama Fries or 1-2 of my crunchy and “CLEAN” Homemade Dill Pickles.
