As a child, and for most of my adult life, I literally HATED cauliflower, or at least thought I did. Until recently (about three years ago), I completely avoided cauliflower altogether.
Then, during the pandemic, my family started using a meal delivery system. Umm…another weight loss game-changer for sure! I make this SUPER LOW-CARB side dish 1-2 times every week to enjoy alongside our GREEN CHEF family dinner! I love to mix it up and use different varieties of cheeses, like Gouda and Asiago. And… when I’m feeling really crazy, I’ll break out the Kerrygold “garlic and herb” flavored butter instead of the regular! OMG! Seriously, it’s so stinkin’ good!
FILLED WITH FIBER
One of the greatest benefits of cauliflower is that it is loaded with fiber. A single cup of cauliflower fulfills 10 percent of our daily dietary fiber needs. Fiber is important because it supports the digestive process and provides a fuel source for the healthy bacteria that lives in our gut. Getting enough fiber can also lower your risk for certain diseases like, heart disease and diabetes.
Fiber also plays a huge role in weight loss because it promotes satiety. High Fiber foods move through the digestive tract slowly. This keeps us feeling fuller for longer. We also don’t absorb calories from fiber, so it just provides satisfying volume. In addition, fiber also slows blood sugar and spikes in insulin, which can also slow down the storage of fat.
